Anchovy Pie


Ingredients for 4 persons
Paired with Aegades Grillo Doc Erice

500 gr. Anchovies
150 gr. Bread crumbs
20 gr. Almonds
50 gr. Raisins
50 gr. Caciocavallo cheese
Salt and Pepper
Olive oil
For the cutters: Olive oil and Bread crumbs


Wash the anchovies, remove the fishbone and the head, open them and wash them again and dry them.
Put the bread crumbs in a bowl, add the ground parsley, the caciocavallo cheese, salt and pepper, olive oil and the raisins. Mix it and leave it rest.
Toast the almonds and crush them.
Grease the bottom of the cutters, put a little bit of bread crumbs and set the anchovies side by side. Put the mixture on the inside and cover with some bread crumbs.
Put into the oven for 20 minutes. Take them out and serve with a glass of Aegades Grillo Fazio.
