This delicate and fragrant sparkling wine, with its evident hints of bread crust, comes from Chardonnay grapes grown in the Erice region and vinified using the Charmat method. The long contact with fermenting yeasts exalts its character without altering the spirit of its original fruit.
Area of production: produced in the vineyards in the DOC Erice territory in western Sicily
Grapes: a special selection of Chardonnay grapes. Sparkling wine, brut quality
Altitude: 350/400 mt. above sea level
Density: 4.000/4.500 plants/ha.
Production technique: healthy grapes of good maturation are harvested into crates followed by destemming, and on-the-skin cold maceration of the must (4°C); soft pressing of the grapes and very slow, temperature controlled fermentation. Second fermentation is done by using the long CHARMAT method
