Area of production: West Sicily, hilly area situated in the north of the province of Trapani

Grapes: Chardonnay 100%
Altitude: 300/350 mt. above sea level
Density: 4.000/4.500 plants per ha
Production technique: harvesting in boxes. Destalked, cold maceration of the skins with the must (4° C).
Soft press of the grapes and very slow temperature controlled 14-16°C fermentation with a stop for 4 months aging on the lees. Cold bottling
Type of wine: White. D.O.C. Sicilia
Colour: yellow straw colour with slight gold reflections
Perfume: characteristic perfume of Chardonnay, intense, refined and elegant, with notes of exotic fruit, honeysuckle and honey
Taste: complex and persistent, full and harmonious
Bottle: 75 cl – 12,5% Vol.
Best served at: 9° C
Ideal served with fresh fish and crustacea in general. Try it with tabulé cous cous of crustacea
