Density: 4.500/5.000 plants per ha – Cru from single vineyard
Production technique: harvesting in boxes.
Destalked, cold maceration of the skins with the must (4° C).
Soft press of the grapes and very slow temperature controlled
14-16°C fermentation with a stop for 6 months aging on the
lees. Cold bottling
