Area of production: produced in the vineyards in the DOC Erice territory in western Sicily

Grapes: Viognier 100%

Altitude: 300/350mt. above sea level

Density: 4.500/5.000 viti/ha Cru from single vineyard

Production technique: harvesting in boxes. Destalked, cold maceration of the skins with the must (4° C). Soft press of the grapes and very slow temperature controlled 14-16°C fermentation with a stop for 6 months aging on the lees. Cold bottling

Colour: gold yellow with greenish reflections

Perfume: characteristic perfume of Viognier, intense, refined and elegant, with a scent of apricots and slight shades of exotic fruits

Taste: complex and persistent, full and harmonious

Bottle: 75 cl – 12,5% Vol. Best served at: 9 ° C.

Food Pairing: Ideal served with fresh fish, withe meet and vegetable, to taste with spaghetti and seafood
