Grapes: Grillo 100%
Altitude: 300/350 mt. above sea level
Density: 4.000/4.500 plants per ha
Production technique: harvesting in boxes. Destalked, cold maceration of the skins with the must (4° C). Soft press of the grapes and very slow temperature controlled 14-16°C fermentation with a stop for 4 months aging on the lees. Cold bottling
Type of wine: White. Doc Sicilia
Colour: dark yellow straw colour with light green reflections
Perfume:characteristic of the grape, intense, refined and elegant, with notes of flowers and hints of exotic fruits
Taste: complex, persistent, full and rich with pleasant mineral notes
Bottle: 75 cl – 12,5% Vol.
Best served at: 9° C
Ideal served with second fish course and crustacea, with white meats and starters seafood
